We mean, who can say no to eating dessert for dinner? We certainly can’t!

1. Fluffy S’mores Pancakes

Our first pancake day recipe is from TikTok, we absolutely LIVE for a quick and easy step-by-step video, it can’t get much simpler than that!

This TikTok creator @thegrubworkskitchen highlights in their video how to make simple yet beautiful fluffy s’mores pancakes.

All in all, this delicious pancake recipe should take you around half an hour – we’re sure you’ll be making s’more after you’re done (okay, we’ll stop).

  • 275g plain flour
  • 2 tbsp baking powder
  • ¼ tspn bicarbonate soda

Forget about faffing around for ages in the kitchen, you can have these light and fluffy pancakes ready in just 10 minutes – what a winner, aye!

You can find out everything you’ll need to make these mouth-watering cheesy pancakes which are perfect for a lunch or a quick bite to eat below.

Ingredients: 

  • 125 g plain flour
  • 1 ½ tsp baking powder
  • ¼ tsp salt
  • 2 large eggs, separated
  • 250 g ricotta, drained
  • 150 ml semi-skimmed or whole milk
  • 1 tsp vanilla extract

3. Mini Caramel Stuffed Pancakes

Let’s be honest, everyone’s tried caramel spread on their pancakes, it’s a classic but it’s still SO good.

This next recipe fully blows it out of the park with caramel stuffed pancakes, of course with drizzled sauce poured over to finish them off.

These are ideal if you’re having a get together with your flatmates cos’ they’re nice and light, you can share them together!

We’ve taken inspiration from social media sensation and TikTok user @fitwaffle for this pancake day recipe, they look amaaazing.

The best part is, you don’t have to mess around too much to make them.

Simply get any thick pancake batter and pour it into a pan in even circles, then add a chunk of dairy milk caramel and top with a little more batter.

Next, you need to flip the mini pancakes once golden, drizzle with caramel sauce and sprinkle on some sugar and there you have it, your pancake extravaganza is ready to serve!

4. Blueberry Cheesecake Pancakes

This next flippin’ fantastic pancake day recipe is a must-try for those of you who love a sweet treat, a blueberry cheesecake pancake!

Plus it’s semi-healthy too with the fruit addition so it can’t get much better than that, aye?

The best part is, you can use either fresh or frozen blueberries to make this recipe so, if you’ve got some fruit in the bottom of your freezer you can make use of it.

Here’s everything you’ll need: 

  • 150g fresh or frozen blueberries
  • 1 tbsp maple syrup
  • 100g cream cheese
  • ½ -1 tbsp icing sugar, to taste
  • 4 pancakes or crêpes
  • 4 caramelised biscuits or ginger nuts, crushed
  • 50g nuts (pecans or almonds), roughly chopped or crushed

These more-ish vegan banana pancakes are everything you’ve been missing for Pancake Day 2023, trust us…

Regardless if you have a plant based diet or not, these fluffy bad boys are a must try and take less than 15-minutes to make.

Of course, remember to use a non stick frying pan when cheffing it up.

We’ll be honest, blue cheese is not everyone’s cup of tea but we think this recipe sounds amazing for a main course with a side salad.

It’s ideal for all of you foodies who fancy something a little different to your bog standard dessert too!
